I’m a fan of non-stick cookware, but for some recipes cast iron is just better. This is one of those recipes. I’m sure non-stick would be just fine, but cast iron just feels right here. Maybe it’s because I could see just about any of my ancestors cooking this dish and they would have used cast iron.
The basic recipe came from the book Scandinavian Cooking: Classic Cooking from Sweden, Norway, Denmark, and Finland but I couldn’t leave it as is. There are leftover holiday foods lurking in my refrigerator. I caught a cold the 1st of December and it lingered all month long. It put a damper on my holiday cooking, not to mention my holiday. Luckily, Brussels sprouts and cranberries last a good long time in the refrigerator!
Roasting Brussels sprouts brings out their natural sweetness, same with the cranberries, adding maple syrup seals the deal. This is an excellent way to introduce people to Brussels sprouts. These poor maligned little vegetables have been mistreated for years. They are powerhouses in the nutrient category, don’t believe me, check here.

We draw names to bring each other birthday treats at work. Somehow, I forgot to bring my persons. Not only did I forget, I forgot for over a month. In an effort to make amends, I made various and many treats to share. These stole the show. The crusty cheese topping contrasts with the creamy filling.
